Arroz Con Leche Recipe

Ingredients

  1. 7 cups water
  2. 1 cup long-grain white rice
  3. 1 cinnamon stick
  4. 12-ounce can evaporated milk
  5. 14-ounce can condensed milk
  6. 1 cup of whole milk
  7. 3/4 cup golden raisins
  8. ground cinnamon, for dusting

Directions:

  1. Put the water, rice, and cinnamon stick in a medium-size heavy saucepan set over medium-high heat.
  2. Bring to a boil, uncovered, and cook until the rice is tender, about 18 minutes.
  3. Strain out the liquid, discard the cinnamon and reserve the rice. Return the rice to the saucepan.
  4. Stir in the evaporated milk, condensed milk, and whole milk. Continue cooking over medium-high heat until the mixture comes to a boil.
  5. Reduce the heat to low and cook, uncovered, stirring constantly, until the mixture is thick, about 20 minutes.
  6. Add the raisins, and stir well. Transfer the pudding to a serving bowl. Dust the top of the pudding with ground cinnamon and serve.

Arroz Con Leche After Care

Rice pudding is best served afer made, however if you have left overs it is best to put the pudding into a bowl and then put plastic wrap on top of the pudding making it airtight! It is important that it is not exposed to air!
You can eat it hot or cold based on your preferences.
